There’s no denying that jell-o shots have a reputation of being a bit… well… trashy. But I’m here today to show you that these babies can be fabulous (not frat party). There’s just 2 simple rules: good quality liquor and not a drop of blue or green food colouring in sight. We’re keeping it classy here, ok? 😉
You will need:
- 330ml grapefruit soda, room temperature
- 10g gelatine
- Juice 1 lime, strained through fine strainer
- 5 shots blanco tequila
- 1 tbs agave syrup (agave nectar and hot water mixed 50/50 and allowed to cool)
- Grapefruit slices to serve
In a saucepan add soda and gelatine and heat gently on a very low heat. Stir mixture continuously with a spoon until the gelatine has completely dissolved. Delight in flashbacks of making jello as a kid.
Remove saucepan from heat and allow the mixture to cool to room temperature. Add tequila, lime and agave and stir to combine and taste for balance. Depending on your grapefruit soda you may need to add more lime or agave for balance.
Pour mixture into a square container, core with plastic wrap and refrigerate overnight. To serve, slice jello into cubes with a sharp knife and serve with fresh grapefruit slices.
