This cocktail is perfect for sunny Sunday afternoons. So I can spend more time catching up with my friends and less time mixing drinks in the kitchen I prefer to make the raspberry syrup a day or so in advance. This cocktail also works really well made in large quantities and served in a jug.
You will need:
- 30 ml quality vodka (I prefer Ciroc)
- 30 ml prosecco
- Soda water
- Basil sprig (or mint) and ice to garnish
- 1 cup raspberries (plus extra to garnish)
- 1/2 cup water
- 1/2 cup sugar
Combine sugar and water in a saucepan over medium heat until sugar is completely dissolved. Allow to cool.
Puree the raspberries in a blender and push through fine sieve to separate seeds. Combine with sugar syrup and lemon.
To serve, add 60 ml raspberry syrup to a tumbler. Add vodka and prosecco. Fill the glass with ice and top with soda water. Add a basil sprig and a few extra berries to garnish.
