Are you ready for a no-brainer breakfast? Chia puddings are one of the easiest things you can make and are perfect for a healthy and filling meal on the go.
You will need:
- 3/4 cup chia seeds (black or white)
- 4 cups your liquid of choice (coconut water, almond milk, rice milk– whatever you like!)
- 2 vanilla bean pods, split in half and seeds reserved
- 2 Tbsp maple syrup
In a large bowl whisk together your liquid, maple syrup and vanilla seeds. If you have a blender or a vitamix you can blend the ingredients together on the lowest speed setting for 30 seconds. Add chia seeds and continue to whisk or blend for another 30 seconds.
If you’ve used your blender, transfer your chia mix to a large bowl. Allow your mixture to rest for 10 minutes. Stir with a wooden spoon, then leave to sit for another 45 minutes. Stir again before distributing into small, single-serve sized jars.
To serve, top with a generous tablespoon of coconut yoghurt and fresh berries.
