You will need:

  • 2 cups oats
  • 1 cup raw almonds, chopped (or pecans or cashews)
  • 1/2 cup quinoa flakes
  • 1/2  cup coconut flakes
  • 3 tablespoons sunflower seeds or pumpkin seeds
  • 1 tablespoon flax seeds
  • 1/2 teaspoon salt
  • 1/3 cup brown sugar (or coconut sugar)
  • 3 tablespoons coconut oil, melted
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon cinnamon


Preheat your oven to 150°C (300°F).

Combine oats, nuts, seeds, quinoa flakes, coconut flakes, salt and cinnamon in a bowl. In a separate bowl whisk coconut oil with vanilla extract. Set aside.

In a small saucepan dissolve sugar in 1 tablespoon of water over low heat. Add to coconut oil mixture and stir well before adding to dry granola mix.

Spread mixture evenly on a large tray lined with baking paper. Bake for 45 minutes, stirring every 15 minutes.

Allow to cool completely (you want your mix to be nice and crunchy) before storing in air-tight jars.

To Serve:

Scoop granola into a bowl. Top with your favourite milk (I love almond) and fresh, seasonal berries. This also tastes great with coconut yoghurt.
