There’s nothing quite like a classic daiquiri cocktail. This recipe requires very little time to prepare or skill– blitz, shake, serve– meaning less time spent in the kitchen and more time chatting with friends.
Use this recipe as a standard base, swapping the fruit and garnish to create your own special combination. Remember there are no limitations here (mango and jalapeño, strawberry and basil, raspberry and lime are some of my favourites) so have some fun experimenting.
You will need:
- 2 cups watermelon, rind removed and flesh roughly chopped
- 90 ml (3oz) white rum
- 2 teaspoons white sugar
- Juice 1 lime
- Pinch of lime zest
- Fresh mint leaves and lemon slices to serve (basil, coriander and fresh jalapeño slices are all great alternatives)
Makes 2 cocktails
Juice watermelon flesh or blitz in a food processor and pour into your cocktail shaker. Top with rum, sugar, lime and ice. Place lid on shaker and (holding on tight) shake vigorously. Strain into 2 tumblers filled with fresh ice and garnish with slices of lemon or lime and fresh mint leaves.
